Description

All trellis-dried grapes need to be finish-dried by dehydration. Frequently, trellis-dried fruit is harvested at high temperatures and high moisture contents, a combination likely to cause rapid deterioration of quality in storage if finish drying is not rapidly applied. Commercial packing sheds will be receiving much of this as higher moisture content pre-finished fruit. The industry wishes to know the parameters which may affect the fruit quality and within which they need to stay to keep this fruit at premium quality (i.e.light coloured, free flowing fruit). This literature review addresses published papers that address the dehydration of Australian type sultanas and other dried grapes.
