Description

Black Aspergillus moulds, including Aspergillus carbonarius, develop on damaged grapes before harvest. A. carbonarius produces a mycotoxin, ochratoxin A (OA), that is an undesirable fungal by-product in dried grapes. To ensure the integrity of Australian dried grapes, research was conducted to develop a dried grape OA testing service and improve knowledge of disease development and management in vineyards.
